There is no server that could keep your document, because your document never reaches one. The editor is a few files your browser downloads once; after that you can disconnect and keep working.
One exception, stated plainly: the adverts on this page load from Google. They are never handed your document — a script on the page cannot read the file you opened.
Everything runs in the tab. Aeroplane, hotel Wi-Fi, a locked-down office network — the editor does not care, because there is nothing for it to call home to.
The font is chosen to match the script actually being typed, not one font for everything — tone marks and Lao letters land where they belong.
Fix a mistake in place, with the rest of the page exactly as the file drew it — nothing else is rebuilt.
